Flatbread Lyrics

In a large bowl combine

Three cups of whole wheat flour

Two pinches of salt

A small pinch of baking powder

And one fourth cup lard or oil

Next

Mix in one cup of warm to hot water

The heat helps disperse the lard or oil

Mix with your hands until a dough forms

You'll get a feel for the consistency over time

But your hands should come away mostly clean

If it's too dry, add water

Too wet, add flour

After your dough has rested for a few minutes

Grab a chunk

With a rolling pin or cylindrical object

Roll out to desired thickness and shape

Place your bread in a hot pan

I keep mine dry or only lightly oiled

Cook on both sides

Brown spots will appear

In my experience

The first bread from any batch turns out weird

Call it Cain

Call it an appetizer

Call the dog

Don't be discouraged

Just make another one

This flatbread dough will store

At room temperature for a few days

I keep it covered so it doesn't dry out
